I could be in trouble here!
As I'm on holiday, I've decided to open a bottle of my latest batch of black-cherry wine, a concoction lovingly created using the finest selection of Dorsets cherry harvest from 2008
A smooth bouquet, with a refreshing vanilla aftertaste, hints of bourganvillea & dark chocolate, and a distinct note of BS
The long & the short of it is.............this stuff packs a kick like a Galloway bullock, and I might not be conscious for very much longer. So may I just take this opportunity to tell you all how very dear you all are to me, and you're all my bestest mates
But don't panic, it's just the drink talking

I think it needs another few weeks in the bottles, to be honest. But the fruit content was so high in the initial wort that all it really needs is a proper clearing, I think. The flavour will improve, and the body should really get lots better as it ages...........but it's actually perfectly drinkable just now.
The Elderberry's on the go too, but it's far too sweet for my taste just now. I reckon I'll give it another feed of yeast, & see if I can get it to ferment again..................it'll be rocket-fuel if that happens, I reckon!

Looks nice Q, and at least this one stayed in the bottle, although for how long who knows. Only one slight criticism....you need much bigger glasses. Thats deffinately the glass of a Scotsman!  |
